Ok so wtf were they using before if brewery waste can be used to mimic the taste of vegan meat, I’d love to see people’s faces when they are offered a vegan burger and they ask what are the patties made out of and the waiter says “oh we just got a full barrel of brewery waste, taste’s great!” jfc.
Actually for something similar. Yeast extract, or Vegemite/marmite as some know it, is a byproduct of brewing, and many vegan recipes use these products for a meat-y flavor.

We eat brewery waste in Australia everyday, it’s called Vegemite. It’s not the issue you think it is.
